The Wine's Natural Freshness

Acidity is one of the most important parts of a wine, even though it is often the hardest to notice. It is the natural freshness that makes your mouth water after every sip. Without it, a wine can taste flat, heavy or dull. With the right acidity, a wine feels bright, vibrant and alive.

Think of squeezing lemon over fresh fish. The fish hasn't changed, but suddenly everything tastes fresher and more balanced. Acidity does the same thing in wine.

Where does acidity come from?

Acidity develops naturally in the grape and is heavily shaped by the Forces of nature. The winemaker can make small adjustments, but most of a wine's acidity is created in the vineyard.

  • 01Cooler climates generally produce higher acidity.
  • 02Warmer climates naturally reduce acidity as grapes ripen.
  • 03Earlier harvesting preserves more acidity.
  • 04Later harvesting creates riper flavours but lowers acidity.
  • 05Certain grape varieties naturally produce more acidity than others.

What does acidity affect?

Acidity changes how a wine feels and tastes. High acidity makes flavours seem brighter and more energetic; lower acidity creates a softer, rounder, richer impression. Neither is better, they simply create different styles of wine.
