The Choice
What is Fermentation?
Fermentation is the natural process that transforms grape juice into wine. Tiny organisms called yeasts consume the natural sugars in the grapes and convert them into alcohol, carbon dioxide and heat. Without fermentation, wine would simply remain grape juice.
Although the process is natural, every fermentation is different. The winemaker guides hundreds of small decisions that influence how the wine develops.

Why does it matter?
Fermentation is where the wine begins to reveal its personality. The speed of fermentation, the type of yeast, the temperature, the vessel and the health of the yeast all influence the aromas, flavours, texture and overall style of the finished wine.
A healthy fermentation produces clean, balanced wines. A difficult fermentation can create unwanted flavours or even stop before all the sugar has been converted into alcohol. For this reason, it is one of the most closely monitored stages of winemaking.

Natural or cultured yeast?
Natural (wild) yeast
Every grape arrives carrying natural wild yeasts on its skin. Some winemakers allow these native yeasts to begin fermentation on their own.
This can create unique, site-specific wines with great complexity, but it is less predictable.
Cultured yeast
Others add carefully selected cultured yeasts. Different strains can enhance tropical fruit, floral aromas, spice, texture or fermentation reliability.
Neither approach is better. They simply produce different styles of wine.

Fermentation vessels
Wine can be fermented in many different vessels, each leaving its own mark on the final style.
Stainless Steel
The most common vessel.
Easy to control and preserves fresh fruit flavours and bright acidity. Widely used for crisp white wines and many modern reds.
Oak Barrels
Fermentation inside oak creates richer texture and greater complexity.
The wine develops slowly while gaining subtle oak influence, making this popular for premium Chardonnay and certain red wines.
Concrete Tanks
Concrete regulates temperature and lets tiny amounts of oxygen through the walls.
Many winemakers believe this creates wines with excellent texture while preserving fruit purity.
Clay Amphorae
One of the oldest winemaking vessels in history.
These clay pots allow gentle oxygen exchange without adding oak flavours, often producing wines with remarkable texture and a strong sense of place.

Temperature
Temperature is carefully controlled throughout fermentation. Cool fermentations preserve delicate fruit and floral aromas, while warmer fermentations extract more colour, tannins and structure. Temperatures that become too high can stress or even kill the yeast.
Modern wineries often monitor temperatures continuously to keep fermentation healthy.

Feeding the yeast
Like all living organisms, yeast needs nutrients to thrive. If the grapes contain low levels of natural nitrogen or nutrients, the yeast may struggle to complete fermentation. Winemakers can add carefully balanced yeast nutrients to keep the fermentation healthy.
Interestingly, the nutrients available to the yeast are often influenced by decisions made months earlier in the vineyard.

Monitoring fermentation
Fermentation is not a process that is simply left alone. Every day the winemaking team measures sugar levels, temperature, density, fermentation speed, aroma development, and taste and texture.
These daily measurements allow the winemaker to guide the wine through fermentation and respond quickly if anything changes.

Managing the skins
For red wines, the grape skins rise to the surface, forming a thick layer known as the cap. The winemaker must regularly mix it back into the juice to extract colour, flavour and tannins.
Punching Down
The cap is pushed back down into the fermenting wine, by hand or machine.
Pumping Over
Juice is pumped from the bottom of the tank and sprayed back over the skins.
Rack and Return
The juice is temporarily drained away before being returned over the skins. Each method extracts different amounts of colour, tannin and flavour.
When things go wrong
Challenges during fermentation
Fermentation is a living process, and things do not always go according to plan.
Stuck Fermentation
The yeast stops before all the sugar is converted.
It may be caused by low nutrients, excessive alcohol, temperatures that are too high or too low, or yeast stress. The winemaker must carefully restart the fermentation to prevent the wine from spoiling.
Slow Fermentation
The fermentation progresses more slowly than expected.
This may be intentional, creating greater complexity, or it may signal that the yeast is becoming unhealthy. Careful monitoring determines whether intervention is needed.
Oxygen Management
A delicate balance from start to finish.
Yeast requires small amounts of oxygen early in fermentation, but too much oxygen later can damage the wine.

Did you know?
During a busy harvest, a winemaker may inspect every fermenting tank several times a day. They taste, smell, measure sugar, monitor temperatures and track each fermentation's progress. Although modern technology provides detailed data, some of the most important decisions still come from the winemaker's senses and experience.
