The Choice
What is Maturation?
Maturation is the period after fermentation when the young wine is allowed to develop, soften and gain complexity before bottling. Although fermentation creates wine, maturation helps refine it.
This stage may last anywhere from a few months to several years, depending on the style of wine the winemaker wants to create. Time itself becomes one of the winemaker's most valuable tools.

Why does it matter?
Young wines are often vibrant but can also be harsh, tightly structured or incomplete. During maturation, hundreds of slow chemical reactions take place. Flavours become more integrated, tannins soften, aromas become more complex and the wine gradually finds greater balance.
The winemaker carefully decides how long the wine should mature and what type of vessel will best help achieve the desired style.

A second process
Malolactic Fermentation
Before maturation begins, many wines undergo a second natural process called Malolactic Fermentation, or MLF. This is not another alcoholic fermentation. Instead, naturally occurring bacteria convert malic acid, the sharp acid found in green apples, into lactic acid, which is softer and creamier.
It softens acidity, creates a rounder, smoother mouthfeel, can produce buttery or creamy aromas and improves long-term stability. Almost all red wines complete MLF. Some whites, such as premium Chardonnay, undergo it for a richer style, while varieties like Sauvignon Blanc are often prevented from it to preserve bright, fresh acidity.
Choosing the vessel
Where the wine will mature
One of the biggest decisions is where the wine will rest. Each vessel influences it differently — some add flavour, others simply allow the slow breath of oxygen.
Stainless Steel
Adds no flavour to the wine.
Preserves freshness, fruit purity and vibrant aromas, ideal for wines that should remain crisp and youthful. Some wineries use micro-oxygenation to gently soften tannins without oak.
Oak Barrels
One of the most famous maturation vessels.
As the wine slowly breathes through the wood, it develops complexity while absorbing subtle flavours such as vanilla, spice, toast, coffee or cedar. The smaller the barrel, the greater the influence.
New Oak (First Fill)
A brand-new barrel provides the strongest oak influence.
Contributes the greatest flavour, aroma and tannin while allowing gentle oxygen exchange. Often reserved for premium wines.
Second Fill
After one vintage, the barrel becomes slightly less influential.
Still contributes complexity while allowing more of the vineyard character to shine through.
Third Fill and Older
Older barrels provide very little oak flavour.
Often used simply because they allow slow oxygen exposure without significantly changing the wine's flavour.
Large Oak Foudres
Very large barrels holding thousands of litres.
Because of their size, they contribute very little oak flavour while still allowing slow maturation through gentle oxygen exchange. Ideal for texture without strong oak character.
Concrete Tanks
Concrete naturally breathes.
Tiny amounts of oxygen enter the wine. Many winemakers believe concrete produces remarkable texture while preserving freshness and purity.
Clay Amphorae
Used for thousands of years.
Like concrete, amphorae allow gentle oxygen exchange without adding oak flavours, often creating wines with exceptional texture and a strong expression of place.
During maturation
Not simply waiting
Maturation is not simply waiting. The wine is constantly monitored and cared for.
Racking
The clear wine is moved off its sediment.
As the wine rests, tiny particles settle to the bottom. The clear wine is carefully transferred into another vessel, leaving the sediment behind. This clarifies the wine while introducing small amounts of oxygen that assist development.
Topping Up
Evaporated wine is regularly replaced.
Small amounts of wine evaporate during maturation, especially in oak. The missing wine is replaced to prevent excessive oxygen exposure.
Monitoring
Every barrel and tank is tasted regularly.
The winemaker tracks aroma, texture, oak integration, tannin development, clarity and stability. Knowing when maturation is complete depends on experience as much as science.
The science
The slow work of polymerisation
One of the most important changes during maturation is polymerisation. During this slow natural process, small tannin molecules gradually join together to form larger molecules. As they become larger, they feel softer and smoother on the palate.
This is why young red wines often feel firm or drying, while mature wines become silky and elegant. At the same time, hundreds of aroma compounds slowly evolve, creating greater complexity and harmony.

Did you know?
Some of the world's finest wines spend longer maturing than they do growing. A grape may develop on the vine for only six months, yet the wine can spend two or even three years carefully maturing before it is finally bottled. In great winemaking, patience is not simply waiting, it is an essential ingredient.
