Alicante Bouschet
Alicante Bouschet is a black-berried teinturier Vitis vinifera created at Mauguio in Hérault, France, by Louis and Henri Bouschet in 1855. It is a cross of Grenache and Petit Bouschet; Petit Bouschet itself descends from Aramon and Teinturier du Cher. Unlike most red cultivars, its pulp and juice are coloured as well as its skins, giving exceptionally rapid, deep pigmentation. The vine is quite vigorous, with medium-large bunches and medium berries, and is normally short pruned because excessive cropping can deplete it. It is also wind sensitive. Historically valued chiefly for adding colour and body to blends, the variety has gained distinction as a varietal wine in Portugal's Alentejo. Its central challenge is abundance: colour and extract arrive easily, while freshness, aromatic definition, proportionate tannin and elegance must be deliberately protected.
Alicante Bouschet buds shortly after Chasselas and reaches mid-season maturity. It suits warm, luminous conditions, yet its finest expression is not simply the hottest one. Excessive heat can raise sugar and pH, soften acidity and turn dense fruit broad or jammy; cooler nights, airflow and a measured harvest preserve definition. A dry ripening period favours sound skins and controlled concentration, while cool or wet seasons can delay maturity and increase downy mildew and phomopsis pressure.
Vigour, water and crop load determine whether Alicante Bouschet becomes energetic or merely massive. Excess water or nitrogen builds shade and diluted fruit, while uncontrolled yield can exhaust the vine. Severe drought can stop canopy function and harden tannin; the cultivar should not be assumed drought-proof simply because it succeeds in warm regions. Maintain a steady but restrained water supply through ripening, prevent late vegetative growth, and preserve enough leaf cover to protect the dark berries from sunburn in hot sites.
Warm, well-drained sites of low to moderate fertility provide the clearest baseline. Clay-limestone, schist, gravelly or alluvial soils can all work when root depth and water availability match the climate. Rich, moisture-retentive ground encourages vigour and over-cropping; very shallow ground can impose damaging stress. Favour airflow and wind shelter together: ventilation helps disease management, but exposed blocks are vulnerable because the vine is wind sensitive. In hot regions, elevation or cooler exposure can protect acidity and fruit detail.
VSP or another supported trellis is a reliable baseline. Shoot positioning improves light, spray access and airflow. Provide secure support and shelter where wind could damage shoots; divided canopies may suit fertile sites.
Use short spur pruning to prevent vine depletion. Set bud number from measured fertility, desired yield and vine capacity. Longer pruning is an exception for low-fertility blocks and needs local evidence.
Remove congestion early and expose bunches progressively while retaining protective shade in hot climates. Regulate crop before véraison; colour alone does not prove ripeness. Avoid late nitrogen and monitor downy mildew, phomopsis, flavescence dorée, bacterial necrosis and wood diseases.
Teinturier pulp can look ready before flavour and tannin align. Follow black-fruit definition, acidity, pH, sugar, seed and skin texture, tannin and berry health. Pick earlier for freshness or blending; wait for fuller maturity only while acidity and fruit remain sound.
Balance. Reconcile immense colour, dark fruit, tannin, alcohol and freshness without excess extraction or oak. 2 — Enhance suits fruit-led wines and blend components; 4 — Develop suits ageworthy lots.
Sort sunburned, shrivelled, unripe or diseased fruit. Destemmed whole berries are the baseline. Gentle crushing releases coloured juice quickly; use whole bunch selectively with lignified stems.
Ferment at moderate temperatures with gentle pump-overs, délestage or infusion. Coloured pulp allows lighter extraction than the visual density suggests. Taste skins and seeds, separate press fractions, and extend maceration only for balanced fruit; excess makes the wine hard and blunt.
Concrete, tank or neutral oak preserves black fruit and freshness. French or Portuguese oak can integrate tannin and add cocoa, cedar and spice; keep new oak proportionate. Larger formats favour savoury definition.
Malolactic fermentation is standard. Blend where perfume, acidity or finer tannin is needed, or use the variety to deepen another red. Fine and filter only as required; protect its saturated hue and detail.
Full Red. Opaque, dry and concentrated, with black fruit, savoury spice, substantial tannin and ample body. 6 — Medium Red suits fresher, earlier-drinking wines and measured blend components.
Full body; medium-high to high tannin; moderate acidity; medium-high alcohol potential; exceptionally deep ruby-purple to opaque colour.
Blackberry, black cherry, black plum, blueberry and damson, with occasional raspberry or violet lift in fresher expressions.

Balanced, concentrated wines can mature over the medium to long term. Black fruit develops toward dried plum, cocoa, leather, balsamic spice and earth. Wines that begin flat, hot or over-extracted gain less from age despite their imposing colour.
