Bourboulenc
Bourboulenc is an ancient white Vitis vinifera from France, most plausibly Provence and the Vaucluse. Its parentage remains unresolved. Plantgrape recognises Doucillon Blanc for French propagation material and Pé Comprido as the official Portuguese name. The cultivar buds around the early-to-middle part of the season but ripens very late, about four and a half weeks after Chasselas. It is moderately fertile, semi-drooping and suited to short pruning with firm training. Large bunches carry medium, thick-skinned berries that turn golden when ripe. Drought adaptation, slow maturation and good acid retention make Bourboulenc valuable in hot, exposed Mediterranean sites. Fully ripe fruit gives fine, fresh, low-alcohol dry whites with moderate aroma, citrus, stone fruit and flowers; underripe fruit can be thin and neutral. Its most recognised role is to lend freshness, line and ageing structure to southern French white blends.
Bourboulenc needs heat, light and a long, dry autumn to complete its slow ripening. Cool or late sites risk dilute flavour and hard acidity; warm, well-exposed slopes allow golden skins and full expression. Budburst is only four days after Chasselas, so spring frost can matter. Powdery mildew is the principal disease risk, with downy mildew also relevant in wetter conditions. Thick skins and relatively open bunches support good grey-rot resistance, although damaged or compact fruit still requires monitoring.
Drought tolerance is a core strength, but tolerance is not immunity. Deep rooting and measured water stress can restrain vigour while preserving the long photosynthetic season. Severe drought may stop flavour development before this late cultivar is ready; excessive irrigation or nitrogen can enlarge an already productive canopy and delay maturity. In warm South African sites, use supplementary water only where soil reserve and vine status justify it.
Choose warm, well-drained and well-exposed Mediterranean sites. Stony clay-limestone, limestone, sandstone, gravel and other heat-retentive soils can support the long finish, provided roots have enough depth. Avoid cold hollows, shaded aspects and fertile wet ground. In South Africa, warm slopes with airflow are preferable; altitude or maritime influence can be useful only if the site still supplies enough heat to ripen this very late variety.
A supported spur-cordon or short VSP system suits the semi-drooping habit and keeps a productive canopy orderly. Provide airflow and even light while retaining enough leaf area to finish the long season. Gobelet is possible only where shoots remain well supported and open.
Short spur pruning is the reference. Set bud number by vine capacity, soil depth and water supply. Overcropping delays maturity; excessive restriction can drive vigour and expose fruit to heat.
Position semi-drooping shoots, remove congestion and maintain mildew coverage. Balance bunch exposure with heat protection. Regulate crop before veraison where necessary so flavour, skin colour and acidity converge before the season closes.
Follow golden skin, citrus and stone-fruit flavour, acid shape and seed taste, not sugar alone. Picking too early gives thin, neutral wine; waiting too long may lose freshness or raise disease and weather risk. Separate uneven or sunburnt fruit.
Balance. Reconcile very late flavour maturity with naturally firm freshness and low alcohol. 2 — Enhance suits direct-pressed, tank-led wine; 4 — Develop suits concentrated, lees-aged or mature blends.
Sort for mildew, sunburn and underripe berries. Whole-bunch or gentle direct pressing protects delicacy; separate hard press fractions from the thick skins. Limited skin contact can build texture from pristine ripe fruit, but long extraction risks bitterness.
Cool-to-moderate fermentation in stainless steel or concrete preserves citrus and flowers without suppressing a naturally moderate aroma. Neutral barrel can build mid-palate. Extraction is normally minimal. Protect must and wine from oxidation while avoiding reductive handling that masks subtle fruit.
Tank and concrete retain freshness; fine lees, large neutral oak or older barrels add breadth. New oak should be restrained. Use malolactic fermentation selectively because the acid line is valuable. Sound, ripe wines can age, but oxygen, ullage and sulphur management are decisive.
Dry still white is central. Blending is a major strength: Bourboulenc contributes freshness and low alcohol alongside Grenache Blanc, Clairette, Roussanne, Marsanne, Viognier, Macabeu or Vermentino. Fine, stabilise and filter only as needed to retain subtle aroma and texture.
Delicate White. Dry, light and fresh, with moderate aroma, low alcohol and firm acidity. 2 — Aromatic White suits fully ripe, fruit-led wine; 3 — Rich White suits concentrated, lees-aged parcels and blends.
Light to medium body; negligible tannin with possible skin-derived grip; medium-high to high acidity; low-to-moderate alcohol; pale straw to gold according to ripeness and age.
Lemon, grapefruit and green apple, with pear, apricot and subtle tropical fruit in fully ripe, warm-site expressions.
Lees, Oak Ageing and Bottle Ageing can add almond, toast, wax, honey and gentle savoury notes.
Simple examples are freshest young. Ripe, concentrated wines with sound acidity can mature over the medium term, moving from citrus and flowers toward dried apricot, honey, wax, almond and savoury complexity.
