The Nature of the Cultivar

Chardonnay is a white Vitis vinifera variety from Bourgogne (Burgundy), France, and a natural cross between Pinot and Gouais blanc. It buds very early and ripens early, with small bunches and berries. Sugar can accumulate while acidity remains high, giving balanced, ample wines with exceptional stylistic reach. Primary fruit is usually citrus, apple, pear and stone fruit rather than overt perfume; site, harvest date, solids, fermentation vessel, malolactic conversion, lees and oak therefore leave unusually visible signatures. Cool fruit can make exact sparkling or unoaked wine, while riper fruit can support barrel fermentation, breadth and long ageing. The variety's strength is responsiveness. Its risk is that early frost, excessive crop, heat, oxidation or heavy-handed cellar work can replace precision with neutrality or weight.

Climate & Season

Chardonnay performs from cool to warm climates, but the style changes quickly. Early budburst exposes it to spring frost; early ripening can protect it from autumn weather. Cool sites preserve acidity and citrus or orchard-fruit definition, yet very cold seasons can leave green, austere wine. Heat accelerates sugar, lowers freshness and shifts flavour toward ripe peach or tropical fruit. Elevation, maritime influence, aspect and harvest date are important tools. Water & Exposure

Chardonnay is famously associated with limestone and marl, which Plantgrape identifies as well suited when fertility is moderate. These are proven contexts, not a universal recipe for flavour or 'minerality'. Clay-limestone soils can provide water reserve and breadth; leaner, well-drained ground can restrain vigour. Site choice should align temperature, available water, drainage and rootstock. Warm exposures help in cool districts, while cooler aspects or elevation preserve freshness where heat is the greater risk.

Remove congestion early, position shoots and expose bunches progressively without losing heat protection. Clone and crop influence acidity, fruit profile and style. Preserve leaf area, but prevent dense shade that increases mildew and rot pressure.

Harvest Window

Harvest against a declared style. Sparkling bases are picked earlier for acidity and modest sugar; lean still wine follows; richer wine can wait for fuller flavour and texture. Taste fruit and track acidity, pH, sugar, berry health and forecast together.

Fruit Processing

Fermentation / Extraction

Cool tank fermentation preserves citrus and orchard fruit. Barrel, large oak, concrete or warmer fermentation can broaden texture. Extraction is normally none to gentle. Manage solids, nutrition, temperature and oxygen carefully: Chardonnay records both reductive and oxidative handling.

Maturation

Tank preserves line and fruit. Lees add breadth; bâtonnage should be purposeful because excess stirring or oxygen can dull wine or create faults. Malolactic conversion may be blocked, partial or complete, changing acidity and adding buttery notes. Oak should remain proportionate to fruit concentration.

Finishing

Blend parcels, clones, vessels, press fractions or reserve wines. Sparkling adds tirage, secondary fermentation, lees ageing and dosage. Still wine requires oxygen, protein, tartrate and microbial stability appropriate to its intended life.
