Chenin Blanc
Chenin Blanc is vigorous, fertile and naturally high in acidity. Its medium-to-large bunches and small-to-medium berries can support sparkling, dry, off-dry, sweet and botrytised wines, but that range depends on disciplined crop and maturity decisions. Early budburst exposes young growth to spring frost, and secondary buds are only weakly fruitful. Ripening is comparatively late and can be uneven within a bunch, so a single harvest date may combine green, ripe and overripe fruit. Excess fertility or water increases canopy density, crop load and grey-rot risk; severe heat can interrupt ripening and flatten freshness. Its defining strength is the ability to carry flavour, texture and sweetness on a firm acid line. Its weakness is imbalance: overcropping produces dilute, green wine, while heat, disease or indiscriminate late picking can sacrifice precision.
Chenin Blanc succeeds from cool to warm regions when the season is long and even. Early budburst raises spring-frost risk, while late ripening exposes fruit to autumn rain and grey rot. Cool conditions preserve acidity but may leave herbaceous flavours if crop and season exceed the site’s capacity. Warmth builds pear, quince and tropical fruit, yet the cultivar is susceptible to heat: rapid sugar accumulation, sunburn and reduced acidity can precede complete flavour development. The useful season is extended rather than extreme, with enough warmth to ripen the crop and a dry, healthy finish.
A moderate, dependable water supply supports Chenin Blanc through its long season. Excess water or fertility amplifies vigour, shade, yield and bunch-rot pressure; severe deficit combined with heat can stop canopy function and separate sugar from flavour maturity. Fruit-zone airflow is essential, but leaf removal should be measured so that berries are not suddenly exposed to intense radiation. The target is an open, functioning canopy with sufficient water to finish ripening and enough restraint to protect acidity and fruit health.
Chenin Blanc is adaptable across soil types, so no single soil name defines quality. Useful sites combine drainage with enough water-holding capacity for a long season and enough restraint to regulate the vine’s natural vigour. Deep, fertile soils can carry excessive crop and canopy unless rootstock, spacing, pruning and irrigation are calibrated. Very shallow or rapidly drying soils increase stress in hot seasons. Site choice should therefore solve four practical needs: rooting depth, moderate fertility, reliable water and a temperature pattern that permits slow, healthy ripening.
VSP supports shoot positioning, measured exposure and bunch-zone airflow. Bush vines suit dry, lower-vigour sites if they protect fruit from heat; Lyre or Smart-Dyson can distribute growth on vigorous sites.
Use spur or cane pruning, matching bud number to clone, site vigour and intended style. Retaining too many buds increases dilution and delays maturity; severe pruning can intensify vegetative growth.
Position shoots and remove leaves selectively for airflow without abrupt heat exposure. Manage lateral growth before the canopy becomes dense. Adjust crop to fruitfulness, bunch health and style: sparkling and fresh dry wines can carry a different crop from concentrated dry or sweet expressions.
Uneven ripeness makes sorting and successive hand passes valuable. Earlier picking preserves high acidity, lemon and green apple for sparkling or linear dry wine. Later picking adds pear, quince, honey and body; sound noble rot can enable sweet wine. Delay is useful only while flavour, acidity and fruit health remain aligned.
Balance. High acidity can support fruit, texture, lees, oak or sweetness, but no element should obscure the wine’s line. 2 — Enhance suits taut, fruit-led or sparkling expressions; 4 — Develop suits richer, oxidative, oak-matured or sweet styles.
Sort rigorously because bunches may contain unevenly ripe or botrytised berries. Direct pressing and protective handling preserve freshness; whole-bunch pressing can give delicate juice. Skin contact, selective oxidation or separate processing of botrytised fruit are deliberate options.
Cool stainless-steel fermentation protects fruit; moderate fermentation in concrete or neutral oak broadens texture. Extraction is normally none to gentle because skin phenolics can harden a high-acid wine. Yeast choice and fermentation completion should follow the intended dryness and aroma profile.
Tank and early release preserve direct fruit and acidity. Lees, concrete or proportionate barrel maturation add breadth; neutral oak is less intrusive than new oak. Partial or full malolactic fermentation can soften richer wines, while its avoidance protects tension. Match vessel, oxygen and time to concentration and sweetness.
Balance residual sweetness against acidity and stabilise it securely. Blending can align lots harvested at different maturities or raised in different vessels. Choose protein and cold stability, fining and filtration for the wine’s composition and market needs, with minimal loss of aroma and texture.
Aromatic White to Rich White. Chenin Blanc can be bright and fruit-led or broad, leesy, oak-shaped and ageworthy. Delicate sparkling, off-dry, sweet and botrytised wines are recognised alternate expressions.
Light-medium to full body; negligible tannin; high acidity; moderate to high alcohol potential; pale straw to deep gold according to ripeness, sweetness, maturation and age.
Green apple, pear, quince and lemon; riper or warmer expressions may show peach, apricot, pineapple, guava and passion fruit.
Noble Rot, Dried Fruit and maturation families may emerge with harvest and age.
Ageing potential is exceptional when acidity, concentration and sweetness are balanced. Apple, pear and citrus can evolve towards quince, honey, wax, dried fruit, nuts and savoury complexity. Dilute, heat-affected or unstable wines lose definition rather than improve.
