Colombar
Colombar is South Africa's customary name for Colombard, a white Vitis vinifera variety from southwestern France and a natural cross between Gouais blanc and Chenin blanc. It buds just after Chasselas and ripens mid-season, with medium bunches and berries. The vine is fertile, very vigorous and productive; hard wood makes pruning difficult, and ripe berries can shed. Traditionally valued for brandy, it also makes crisp still and sparkling wines. Natural acidity and fermentation-released varietal thiols can deliver lime, grapefruit, peach, nectarine, guava and passion fruit. Its strength is retaining freshness and aroma in warm regions. Its risk is that excessive yield, drought, delayed harvest or careless oxygen management can turn energy into dilution or simple fruitiness.
Colombar needs a temperate to warm season to complete its later ripening pattern. Warm conditions suit its South African role, but heat and drought can suppress aroma and canopy function. Cooler sites preserve very high acidity yet may struggle for full flavour. Spring frost remains a risk around budburst. A dry, ventilated finish limits grey rot, while harvest timing decides whether the wine is neutral and acid-led for distillation, bright and aromatic for still wine, or lean enough for sparkling production.
Reliable water is important because Colombar does not tolerate severe drought well, especially in hot inland districts. Too much irrigation or nitrogen amplifies its natural vigour, shade and yield; too little water shuts down the canopy before aroma develops. Regulate irrigation through the season, maintain leaf function and introduce exposure gradually. Crop level should match the intended destination: high-volume or distillation fruit tolerates more, while expressive varietal wine requires firmer restraint.
Colombar is adaptable, but site quality rests on the relationship between drainage, water reserve and vigour. Clay-limestone and other moderately fertile soils can support its water needs; deep alluvial or sandy loams suit warm irrigated regions when growth is controlled. Very fertile ground can inflate crop and delay flavour, while shallow dry ground magnifies stress. Cooler aspects, airflow or elevation are useful in hot districts; warmer exposures help where complete ripening is uncertain.
VSP or another supported trellis is a strong baseline for containing vigour, positioning shoots and protecting the crop from wind. Keep the fruit zone open and accessible for rapid harvest.
Both long and short pruning are possible. Short pruning is useful for limiting yield in quality still wine; longer pruning can support production goals. Allow for unusually hard wood and set bud number from vigour, fertility and style.
Remove congestion early, position shoots and expose bunches gradually without sacrificing heat protection. Control crop before the canopy becomes self-shading. Monitor powdery mildew on leaves, ripe-fruit grey rot and wind damage; avoid late manipulation that encourages berry shedding.
Harvest against a declared use. Pick sparkling or distillation bases earlier for acid and modest sugar; allow still-wine fruit more time for thiol precursors and peach or tropical character. Balance aroma against acidity, pH, berry health, wind, forecast and the variety's tendency to shed when fully ripe.
Enhance. Protect acidity while using harvest timing, must clarity, nitrogen and yeast to release Colombar's citrus and tropical aroma. 1 — Preserve suits sparkling and distillation bases; 3 — Balance suits textured old-vine or lees-aged wine.
Harvest cool and process rapidly. Whole-bunch or direct pressing protects sparkling and fine still wine; gentle crushing improves throughput. Brief, controlled skin contact may increase aroma extraction but also phenolics. Separate damaged or rot-affected fruit, manage press fractions and exclude oxygen where freshness is the goal.
Cool stainless-steel fermentation is the baseline. Colombar's key thiols are released during fermentation, so yeast choice, must nitrogen, turbidity, temperature and oxygen all matter. Extraction is normally none to gentle. Native fermentation or neutral vessels suit selected old-vine lots, but clean kinetics are essential for bright aromatic wine.
Tank and short lees contact preserve freshness. Malolactic conversion is normally blocked or limited so high acidity remains an asset; selected textured lots may use partial conversion. Neutral oak, concrete or extended lees can broaden concentrated old-vine wine, but new oak readily overwhelms the cultivar's vivid fruit.
Blend parcels or complementary cultivars for acid and aromatic lift, or direct suitable base wine to sparkling production or distillation. Protect against oxygen, then match protein, tartrate and microbial stability to residual sugar, carbon dioxide and intended shelf life.
Aromatic White. The baseline is dry, light-medium, high-acid and fruit-led. 1 — Sparkling and 3 — Rich White are important alternates.
Light to medium body; very low grip; high acidity; moderate alcohol potential; pale green-gold to lemon colour.
Lime, grapefruit, green apple and pear; fuller ripeness adds peach, nectarine, guava, passion fruit and melon.
Also: Lees. Thiols released during fermentation help drive grapefruit, guava and passion fruit.
Most Colombar is youthful. Citrus and tropical notes soften toward dried fruit, honey and savoury lees tones. Concentrated old-vine or traditional-method sparkling wines can develop further, but high acidity alone does not guarantee longevity.
