Heat damage, sometimes called "maderisation" when severe, happens when a wine is exposed to excessive heat during shipping or storage. The fruit cooks, the wine ages abnormally fast, and the result tastes stewed and flat rather than fresh a fault of handling, not of the winemaking itself.
What does it smell like?
Stewed or cooked fruit, caramel, jammy sweetness, or a flat, muted character that lacks the freshness the wine should have.
Cork movement is often a visible clue heat can push the cork partway out of the bottle as the wine expands.

Is a wine that tastes "jammy" or "cooked" always heat-damaged?
Not necessarily. Very ripe fruit from a hot vintage or warm region can naturally show jammy, dark-fruited character. Heat damage is distinguished by an accompanying flatness, loss of freshness, and sometimes a pushed or leaking cork, signs of external damage rather than natural ripeness.
Learn to Recognise It
- Does the fruit taste stewed or cooked rather than naturally ripe?
- Has the cork pushed up or is there leakage around the capsule?
- Does the wine taste flat, with none of the freshness expected for its style?
- Was the bottle stored somewhere hot, such as a car or a sunny window?
A pushed cork or leaked capsule is one of the clearest external signs to check before you even open the bottle.
Heat damage is a reminder that an outcome can be undone long after the choices that built it were made well. It teaches that care does not end at the moment of creation, a wine's fate can still turn on how carefully it is handled after it leaves the hands that made it.
Wine is generally recommended to be stored between roughly 12–18°C, even a few hours above 30°C during transport can begin to noticeably change a delicate wine's character.
