Instant
Instant coffee starts life as ordinary brewed coffee, which is then dried, either by spray-drying into fine powder or freeze-drying into granules, so that nearly all the water is removed. What's left dissolves straight back into hot water, skipping the brewing equipment and time that other methods require. It trades some of the aromatic complexity of freshly brewed coffee for speed and convenience.
Coffee is brewed in bulk, then concentrated and dried using one of two methods: spray-drying, where the liquid coffee is sprayed into hot air and dries almost instantly into fine particles, or freeze-drying, where the frozen concentrate is broken into granules and dried under vacuum at low temperature, generally better preserving aroma.
Freeze-dried instant tends to retain more aromatic complexity than the older spray-dried style, and some producers now use specialty-grade beans and gentler drying methods to close the gap further with fresh-brewed coffee.
Valued most where convenience matters most: travel, camping, the office, or simply a fast cup first thing in the morning, rather than as a substitute for a slow, considered brew.
Instant coffee exists for the moments when speed matters more than ceremony, compressing the entire brewing process into a spoonful and a kettle.
