The Nature of the Cultivar

Nebbiolo is an ancient Italian black cultivar registered by VIVC as variety 8417. Piedmont is its historic stronghold; Spanna in northern Piedmont, Chiavennasca in Valtellina and Picotendro in Valle d’Aosta are important regional names. Lampia and Michet are selected forms within the Nebbiolo population, while Nebbiolo Rosé is genetically distinct and must not be treated as a simple colour clone. The cultivar buds early but ripens very late, usually in October, and demands a long, even season, favoured hillside exposure and exacting canopy work. Calcareous marl is emblematic, yet clay-limestone, sandstone and Alpine sites can give markedly different expressions. Small to medium berries give wines of deceptively pale ruby-garnet colour, very high acidity and tannin, and an aromatic spectrum of sour cherry, raspberry, rose, violet, anise, tar and earth. With time, dried flowers, leather, tobacco and truffle emerge. The central challenge is development: ripen skins, seeds and stems fully, then extract and mature patiently enough to civilise structure without erasing perfume or site.

Climate & Season

Nebbiolo suits temperate continental climates with warm days, cool nights and a long, relatively dry autumn. Early budburst brings spring-frost exposure; late October ripening brings rain, fog and Botrytis risk. It needs strong light and heat accumulation, traditionally on south to south-west hillsides. Day-night variation helps preserve perfume and acidity. Excess heat can desiccate fruit or harden tannin, but cool or shaded sites struggle to complete phenolics.

Water & Exposure

A long season requires steady, moderate water supply. Deep reserves help sustain ripening, while severe drought causes shutdown, shrivel and angular tannin. Excess water and nitrogen stimulate the vine's considerable vigour, shade the fruit and delay maturity. Regulate irrigation from soil moisture, shoot growth and berry condition. Open the canopy progressively, retaining enough leaf and dappled shade to avoid sunburn in hot climates.

Soils & Site

Calcareous marl, clay-limestone and well-drained sandstone are classic settings; northern Piedmont and Valtellina also show Nebbiolo's capacity on mineral, Alpine soils. Quality depends as much on drainage, exposure and water balance as on soil name. Avoid fertile valley floors, damp flats and poorly exposed slopes. Match rootstock and spacing to lime, vigour, drought risk and the long ripening requirement rather than encouraging easy crop.

Training

Counter-espalier VSP with Guyot is the reference, providing long pruning, orderly shoots and an accessible fruit zone. Terraces may need adapted supported systems. Set canopy height for light, airflow and wind protection without abrupt exposure.

Pruning

Long or mixed cane pruning is conventional. Set cane length and bud number from vigour, fertility and target style; balance matters more than a fixed yield. Retain renewal positions and remove weak or crowded shoots early.

Canopy & Crop

Position shoots, control laterals and prevent a shaded, humid fruit zone. Leaf-remove gradually and judge afternoon exposure by climate. Thin shoots or bunches where ripening is uneven. Monitor mildews, Botrytis, moths, trunk disease and virus symptoms; keep selection blocks separate.

Harvest Window

Pick by skins, seeds, tannin grain, acidity, flavour and health—not sugar alone. Waiting can transform hardness into perfume, but October rain, fog, rot and dehydration narrow the window. Harvest cool, separate lots and reject unripe, mouldy or raisined fruit.

Approach
4 — Develop

Develop is the baseline: patient maceration, malolactic conversion and measured oxygen mature tannin while preserving rose, red fruit and site. 3 — Balance suits earlier red; 2 — Enhance suits rosato or sparkling expressions.

Fruit Processing

Sort rigorously, then destem with whole berries. Whole bunch is optional only with lignified, clean stems and a clear purpose. Cold soak may lift fragrance but is not required for colour. Keep fruit cool and avoid crushing seeds.

Fermentation / Extraction

Ferment moderately warm in tank, concrete, open fermenter or wood. Long and shorter macerations both work; use gentle cap work and press by taste. Chasing colour risks bitterness. Complete malolactic fermentation and separate press fractions.

Maturation

Large seasoned Slavonian or French oak is classic; neutral cask, concrete and measured barrique are alternatives. Long, controlled maturation integrates tannin. Heavy new oak can dry the finish or obscure flowers, cherry and site. Bottle age is integral.

Finishing

Blend free-run and selected press wine after texture settles. Fine conservatively and filter to risk. Protect mature perfume from oxidation while allowing evolution. Bottle for integration and release when aroma and tannin are coherent.

7–7 — Full Red

Full Red: pale ruby-garnet yet powerful, dry, perfumed, acidic and tannic. 6 — Medium Red is a fresher alternate; 4 — Dry Rosé and sparkling rosato are specialist styles.

Structure

Medium-full to full body; very high tannin and acidity; medium-high alcohol; low to medium colour. Visual delicacy and formidable structure define the paradox.

Primary Fruit

Sour cherry, red cherry, raspberry, cranberry, wild strawberry and red plum; riper sites may show black cherry without losing the red-fruit core.
