Oxidation is what happens when a wine is exposed to too much oxygen over its life, whether through a failing closure, poor storage or age itself. Fresh fruit character fades and is replaced by nutty, bruised-apple, sherry-like aromas desirable by design in a handful of fortified styles, but a fault in almost everything else.
What does it smell like?
Bruised or brown apple, sherry, caramel, or a flat, dull nuttiness that replaces the wine's fresh fruit.
The colour often confirms it — oxidised whites turn deep gold or brown, and oxidised reds lose their bright edge and turn brick or brown.

Oxidation is generally discussed as a tertiary-stage fault when it happens prematurely, a wine ageing far faster and less gracefully than it should, through excess oxygen exposure rather than time alone.

Learn to Recognise It
- Has the colour shifted noticeably toward brown or deep gold (in a white) or brick (in a red)?
- Does the wine smell more like sherry or bruised apple than fresh fruit?
- Does the wine taste flat, with dulled acidity and no lift?
- Was the wine stored somewhere warm, bright, or upright for a long period?
Colour is often the fastest clue, oxidation shows in the glass before you even bring it to your nose.
Oxidation is one of the clearest reminders that time alone does not create maturity, exposure without control simply unmakes what was carefully built. It teaches that preservation is an active choice, not a passive default; left alone, most things drift toward decay rather than depth.
Sherry producers use a system called the solera, deliberately blending wines of different ages under a thin layer of yeast, to control oxidation precisely rather than avoid it, turning the same process that ruins most wines into an entire category of its own.
