The Nature of the Cultivar

Pinot Noir is an ancient black Vitis vinifera from Burgundy, registered by VIVC as variety 9279. Confirmed parentage is not assigned, but the genetically unstable Pinot family has produced colour and growth mutations including Pinot Blanc, Pinot Gris and Meunier, and has parented important natural crosses. Pinot Noir buds about one day after Chasselas and ripens only half to one week later. Small, often compact bunches and very small-to-small berries give high quality potential but limited colour, moderate acidity and delicate skins. The vine performs best with low-to-moderate vigour and controlled yields in temperate climates, especially clay-limestone soils. Heat accelerates ripening and shrivelling; humidity increases downy mildew, grey rot and leafhopper pressure. In South Africa, cool coastal sites in Hemel-en-Aarde and Elgin support still red wine, while earlier-picked fruit is important to Cap Classique. Its governing challenge is transparency: site and perfume must remain visible through ripeness, extraction, stems and oak.

The Forces
Climate & Season

Cool-to-moderate, temperate conditions favour a long, even season and preserve Pinot Noir's acidity and perfume. In hot climates maturation becomes rapid and berries may shrivel, compressing the interval between flavour and excessive sugar. Wind and rain at flowering can reduce set; humidity near harvest magnifies grey rot in compact bunches. South African maritime air, altitude and cool nights are therefore valuable, while a dry final phase protects fruit health.

Water & Exposure

Water must support steady canopy function without driving vigour or swollen berries. Excess supply and nitrogen shade compact bunches, dilute flavour and heighten rot; severe stress stops ripening and can expose thin skins to sunburn or shrivelling. Deep clay-bearing soils can buffer dry periods, but drainage remains essential. Irrigate only by measured vine and soil response, tapering carefully as colour develops while retaining enough leaf cover for protection.

Soils & Site

Clay-limestone is the documented reference, but South African Pinot Noir also succeeds on shale-derived clay loam, decomposed granite with clay-rich subsoil and sandstone-shale combinations. Choose well-drained, low-to-moderate-vigour slopes with airflow and a cool or tempered exposure. Avoid fertile wet hollows and hot reflective ground. The best site delays sugar while skins, seeds and aroma mature, without sacrificing the bright acidity that carries red fruit and savoury detail.

Training

Use VSP or another supported trellis to distribute shoots and keep compact bunches accessible. Guyot or cordon can work where fertility and clone suit. Prioritise airflow, spray coverage and even ripening over canopy size.

Pruning

Choose cane or spur pruning from clone, fertility and training. Set bud number to a quality crop, then remove unwanted shoots and secondary bunches early. Excess yield dilutes perfume; very low crop can push sugar ahead of freshness.

Canopy & Crop

Position shoots early and ventilate the fruit zone without exposing thin skins abruptly. Debud carefully because the vine produces secondary bunches. Monitor downy mildew, grey rot, leafhoppers and leafroll. Thin only where crop or crowding threatens even ripening.

Harvest Window

Separate sparkling and red targets. Pick base wine early for high acidity, low sugar and clean fruit. For red, taste skins, seeds and stems with sugar, pH and acidity; seek cherry perfume and supple tannin before shrivelling or falling acid. Harvest cool and reject rot or sunburn.

Balance. Fruit, acidity, fine tannin, stems and oak must remain proportionate. 1 — Preserve suits sparkling base wine; 2 — Enhance suits fragrant red or rosé; 4 — Develop suits structured, ageworthy red.

Fruit Processing

Hand-sort rigorously. Destem gently and retain whole berries, or include ripe whole bunches by trial for lift, spice and structure. For Cap Classique, press whole bunches gently and separate fractions; for red, avoid crushing seeds and protect fragile fruit from oxidation.

Fermentation / Extraction

Ferment red lots cool to moderate in open vessels, tank, concrete or large oak. Cold soak is optional. Use gentle punch-downs, pump-overs or infusion by daily tasting; modest pigment does not justify harsh extraction. Press early or extend only when phenolics remain refined.

Maturation

Complete malolactic fermentation in tank or barrel, then mature in French barrique, larger oak or neutral vessels. Measured new oak can frame concentrated fruit; too much masks perfume and dries the finish. Fine lees build texture. Cap Classique relies on reserve wine and bottle lees ageing.

Finishing

Blend by block and clone; fine or filter only after trials because Pinot loses aroma easily. Manage oxygen and sulphur precisely. Rosé and blanc de noirs need minimal colour pickup; Cap Classique adds tirage, bottle fermentation, lees ageing, disgorgement and dosage.

6–6 — Medium Red

Medium Red. Dry, translucent and perfumed, with red fruit, fresh acidity, fine tannin and savoury length. 5 — Light Red applies to delicate early-release wine; 4 — Dry Rosé and 1 — Sparkling are established alternatives.

Structure

Medium body; fine low-to-medium tannin; medium-high acidity; medium alcohol potential; pale-to-medium ruby colour. Site, crop, whole bunch, extraction and oak can shift the wine from delicate to firmly structured.

Primary Fruit

Strawberry, raspberry, cranberry, red cherry and pomegranate; black cherry, blackberry and plum emerge in riper or warmer expressions.
