The Nature of the Cultivar

Pinotage is a black Vitis vinifera created at Stellenbosch by Professor Abraham Izak Perold from Cinsaut, then called Hermitage, and Pinot Noir. VIVC registers it as variety 9286 and confirms the parentage by markers. The moderately vigorous, fertile vine grows erect, accepts short pruning and ripens early to mid-season. Wind-sensitive shoots favour trellising; compact bunches and small ellipsoid berries reward airflow and close health monitoring. Pinotage can make rosé, bright early-drinking red, concentrated ageworthy red, sweet wine and Cape blends. Its deep colour, substantial body and distinctive red-to-black fruit are not a licence for excess. Crop and water must align sugar with skin maturity, while clean fruit, temperature control and measured extraction prevent hardness, volatile acidity or dominant acetate character.

Climate & Season

Warm, dry South African conditions are the reference, but the variety is adaptable. Early-to-mid budburst and ripening reduce exposure to late-season rain; extreme heat or water deficit can still accelerate sugar, shrivel fruit and soften acidity before tannins settle. Coastal air, altitude or cooler nights help preserve red fruit and freshness. Humid seasons raise compact-bunch disease pressure.

Water & Exposure

The Pinotage Association favours deeper soils with useful water retention. Well-drained granite, shale and balanced clay-loam sites are practical Cape references where rooting depth moderates heat and drought. Avoid lush, wet soils that inflate vigour and shade compact bunches, or shallow hot ground that forces abrupt stress. Rootstock should follow soil and water supply rather than amplify growth.

Soils & Site

Open benches, foothills and slopes work when drainage, airflow and water supply are dependable. Shelter wind-sensitive shoots or support them early. In hot interiors, cooler aspects, altitude and afternoon shade extend ripening; in cooler districts, choose exposures that complete flavour and tannin maturity. Avoid frost pockets, humid hollows and severe wind corridors.

Training

Supported cordon or VSP protects wind-sensitive shoots and organises an erect canopy. Bush vines suit balanced, lower-vigour dryland sites with enough rooting depth. Keep bunches ventilated with dappled shade rather than full exposure.

Pruning

Short spur pruning suits the fertile vine. Set bud number to site capacity and intended style, then correct excess crop early. Avoid both over-cropping, which delays skin maturity, and severe restriction that drives sugar and alcohol ahead of freshness.

Canopy & Crop

Position shoots early, protect them from wind and open the fruit zone selectively for airflow. Manage powdery mildew, downy mildew and Botrytis according to season. Moderate water and nitrogen; thin only where crop exceeds the vine's ripening capacity.

Harvest Window

Taste skins, seeds and pulp with sugar, pH and acidity. Pick lighter or rosé fruit on bright red flavour and freshness; hold serious red only while black fruit, tannin and vine function improve. Exclude sunburn, rot and dehydration, and harvest cool where possible.

Fruit Processing

Sort rot, desiccation and damaged berries rigorously. Destem and retain some whole berries for fruit-led wine; crush more fully for structured styles. Whole bunches need ripe stems and trials. Cold soak can build colour, but only with healthy fruit, daily mixing and strict hygiene.

Fermentation / Extraction

The Pinotage Association links 22–24°C with a more estery early-release style, 24–28°C with fuller wood-matured wine, and hotter ferments only with caution. Use regular, gentle cap work, monitor cap temperature and press by taste. Temperature, oxygen, nutrition and microbial control limit volatile acidity and excessive acetate notes.

Maturation

Tank, concrete or older oak keeps a juicy style transparent. Fuller wine accepts barrel maturation and a measured proportion of new wood, provided fruit and tannin can absorb it. Lees, topping, oxygen and sulphur management matter more than an automatic oak recipe.

Finishing

Complete and verify malolactic fermentation unless a fresher style deliberately prevents it. Rack and stabilise according to microbial risk, retain press wine separately until blending, and fine harsh phenolics only after trials. Pinotage can anchor Cape blends or add colour and fruit to red blends.

6–6 — Medium Red

Medium Red. Dry, deeply coloured and fruit-led, with medium-full body and firm tannin. Rosé, light or full red, sweet and fortified expressions are alternatives.

Structure

Medium-full body; medium-high tannin; moderate acidity; high alcohol potential; deep ruby-purple colour. Earlier picking lightens the frame; low crops, later harvest and oak add density.
