The Nature of the Cultivar

Roussanne is a white Vitis vinifera cultivar from the northern Rhône, registered by VIVC as variety 10258 and closely related to Marsanne through an unresolved parent-offspring relationship. Its small round berries turn amber to russet at full maturity, explaining a name linked to the French roux. The vine produces very long shoots, small-to-medium bunches and variable yields, and needs careful support. It buds about eight days after Chasselas and reaches mid-season maturity roughly three and a half weeks later. The cultivar is highly sensitive to powdery mildew, grey rot, mites and thrips. Roussanne can produce powerful yet finely balanced wines with pear, apricot, flowers, honey, herbs and waxy-savoury texture, supported by useful acidity and significant ageing capacity. South African plantings remain tiny but support varietal wines and Rhône-style blends; Rustenberg and The Foundry document pioneering examples from Stellenbosch and Voor-Paardeberg. Its central challenge is precision: healthy, evenly ripe fruit must become textured wine without bitterness, excessive alcohol or oxidation.

Climate & Season

Roussanne needs enough warmth and sunlight to complete its mid-season ripening, but the best sites temper heat so acidity and perfume remain. Cool-to-moderate conditions favour flowers, citrus and mineral line; warmer sites build pear, apricot, honey and body but can compress the harvest window. Humidity or harvest rain sharply raises powdery-mildew and grey-rot pressure. Wind can disturb long shoots and fruit set. Favour an even season, dry ventilated finish, cooler nights and protection from extreme afternoon heat.

Water & Exposure

Water should sustain canopy function and even berry maturity without driving long, shaded growth. Excess irrigation or nitrogen increases disease pressure, delays flavour and softens definition; severe deficit can stop ripening and accelerate sugar concentration before flavour is complete. Regulate water from soil reserve and vine response. Open the fruit zone gradually for airflow and spray access while retaining enough leaf cover against sunburn. Avoid late vigour and abrupt exposure of amber berries.

Soils & Site

Official French guidance favours poor, stony, well-exposed clay-limestone soils. The principle is more important than the geology: use well-drained ground that moderates vigour, offers sufficient root depth and carries the crop evenly through ripening. Decomposed granite has produced strong South African examples. Avoid fertile, waterlogged or very shallow drought-prone sites. In warm districts, altitude, cooler aspects or maritime influence can protect acidity; in marginal sites, secure sunlight and drainage.

Training

Use a carefully supported VSP or comparable trellis because shoots are exceptionally long. Position and secure growth early for light, airflow and spray access. A divided canopy can help on vigorous ground; retain sufficient foliage where sun and wind are severe.

Pruning

Moderate long pruning or short spur pruning are both credible. Choose by clone, basal fertility, site and vine capacity, then verify bunch number after set. Irregular or low fertility discourages automatic yield assumptions; severe under-cropping can increase vigour and alcoholic weight.

Canopy & Crop

Remove congestion early, position long shoots and expose bunches progressively. Monitor powdery mildew, grey rot, mites and thrips closely. Thin crowded, damaged or delayed fruit where maturity is uneven. Revisit the fruit zone before harvest so airflow improves without creating sunburn.

Harvest Window

Follow flavour, acidity, pH, sugar, berry colour, phenolic taste and fruit health. Earlier picking preserves flowers, citrus and line; later picking builds apricot, pear, honey and texture but raises alcohol, rot and oxidation risk. Selective passes can separate uneven maturity. Pick cool, sort rigorously and process promptly.

Balance. Roussanne's natural power, phenolics and oxidative sensitivity must be reconciled with perfume, acidity and texture. 2 — Enhance suits bright tank-led wine; 4 — Develop suits concentrated, lees-aged or oak-raised expressions.

Fruit Processing

Sort rot, sunburn, shrivel and unripe fruit. Whole-bunch or gentle direct pressing limits phenolics; separate hard press fractions. Protect juice promptly for fresh styles, while clean concentrated fruit may accept controlled oxygen or higher solids. Skin contact should be brief, cool and trialled rather than assumed.

Fermentation / Extraction

Cool-to-moderate fermentation in stainless steel, concrete, seasoned barrel or amphora can all work. Avoid excessively cold fermentation that mutes texture, and monitor high-solids or spontaneous lots carefully. Extraction is normally minimal. Partial malolactic fermentation can soften and integrate; full conversion requires enough natural acidity.

Maturation

Fine lees, bâtonnage, neutral barrel, large oak, concrete or amphora can build breadth while retaining savoury line. New oak suits only concentrated fruit and should not cover flowers or pear. Roussanne can age impressively, but it is oxidation-prone: manage ullage, sulphur, transfers and closure with discipline.

Finishing

Blend lots to recover freshness and shape. Roussanne contributes perfume, acidity, body and length to Marsanne, Grenache Blanc, Viognier and broader Cape white blends. Fine for coarse phenolics or protein risk only as needed, stabilise appropriately, and filter according to microbial and packaging risk.

Rich White. Dry, medium-full to full, floral and textural, with pear-apricot fruit, savoury detail and ageing capacity. 2 — Aromatic White suits earlier-picked or tank-led examples; sparkling and sweet styles are possible but not central.

Structure

Medium-full to full body; negligible tannin but possible phenolic grip; moderate acidity; medium-high alcohol potential; pale straw to gold. Site, crop, pressing, lees and oak determine whether the palate is precise and waxy or broad and bitter.
