Rum

Rum may be the most educational category of all. The same raw material — sugar cane — can be turned into spirits as different as a light, clean column-still rum and a deeply funky, ester-heavy pot-still rum.

Jamaican vs Cuban-Style Rum

Jamaican rum is prized for high-ester, funky, pot-still character built through long fermentation and sometimes deliberately soured "dunder" pits. Cuban-style rum favours column distillation and shorter, cleaner fermentation for a lighter, smoother spirit.

Neither is more authentic than the other — they're simply different Choices, made in response to the same Force.
