Sangiovese
Sangiovese is a black Vitis vinifera cultivar from Italy, registered by VIVC as variety 10680. It is most strongly associated with Tuscany, although it is grown widely through central Italy and in Corsica as Nielluccio. Published DNA work commonly reports Ciliegiolo and Calabrese di Montenuovo in its parentage, while the precise genealogical direction has been debated. The genetically broad population includes regional names and selected forms such as Brunello, Prugnolo Gentile, Morellino and Sangioveto. The vine has moderate vigour, early budburst and mid-season to medium-late maturity. Bunches are medium and berries comparatively large. Sangiovese can retain high acidity and firm tannin at full flavour maturity, yet colour is only moderate and falls as yield rises. Its best wines combine cherry, plum, violet, herbs and savoury earth with freshness, structure and long ageing potential; lighter red, rosato and blended expressions are also credible. South African plantings are small and require meticulous vineyard management.
Sangiovese needs a long, bright season that ripens skins and seeds while preserving acidity. Early budburst creates spring-frost exposure; a slow finish under dry, ventilated conditions develops cherry, violet and savoury detail. Warm days, cool nights, altitude and hillside airflow are useful. Cool or shaded sites can leave green tannin and sour fruit, while excessive heat, drought or delayed harvest can push alcohol and dried-fruit character ahead of finesse.
The variety tolerates drought and low-fertility ground, but even water supply is important through flowering and berry growth. Use soil reserve or measured irrigation to avoid shutdown without stimulating vigour or berry swelling. Late water and nitrogen can delay phenolic maturity, enlarge berries and weaken colour. Open the canopy for drying and light, while retaining measured protection in hot South African exposures.
Well-drained, low-fertility hillsides are the classic fit. Tuscany demonstrates Sangiovese on shallow marl, limestone, clay-sand and stony soils; the common strengths are drainage, moderate vigour, sunlight and water-holding balance rather than one compulsory geology. Clay can support structure and water reserve; limestone and rocky ground can favour perfume and tension. Avoid fertile flats, waterlogging, frost pockets and cold exposures that delay ripening.
Guyot, spurred cordon and bush or gobelet can work. Choose geometry for even shoots, airflow and sun protection. VSP helps vigorous sites; compact cordon or bush suits dry, low-vigour ground.
Use cane or short-spur pruning only after verifying basal fertility and material. Set bud number to vine capacity and the quality target; excessive crop dilutes colour and tannin maturity.
Position shoots early, remove congestion and expose bunches gradually. Balance productive selections before veraison. Maintain powdery-mildew protection, monitor autumn rain and avoid late exposure that sunburns berries.
Judge flavour, skins, seeds, acidity, tannin and weather together. Pick earlier for fragrant red or rosato; wait for reserve maturity only while fruit stays healthy. Separate uneven clones, aspects and ripening bands.

Sort underripe, raisined or damaged fruit. Destemming with whole berries is dependable; partial whole bunch needs ripe stems. Gentle crushing and parcel separation preserve options; rosato needs rapid, protected handling.
Ferment moderately warm with measured pump-overs or plunging. Extraction follows skin and seed ripeness, not pale colour. Use short maceration for youthful wine and extended maceration only for ripe lots; complete malolactic fermentation.
Tank or concrete preserves cherry and flowers. Large neutral oak supports long ageing; restrained barrique or tonneau adds polish. Keep new oak proportionate and use wood and bottle oxygen to integrate tannin.
Blend parcels after tannin, freshness and aroma are clear. Stand-alone and blended expressions both work. Trial fining carefully, stabilise to risk and give serious wines bottle maturation.
Medium Red: dry and ruby-coloured, with high acidity, firm tannin, cherry, violet and savoury earth. 7 — Full Red suits concentrated reserve; 5 — Light Red and 4 — Dry Rosé cover youthful expressions.
Medium body; firm tannin; high acidity; medium-high alcohol potential; moderate ruby colour. Lower yields and full phenolic ripeness deepen structure without requiring opaque colour.
