The Nature of the Cultivar

Sauvignon Blanc is naturally vigorous, aromatic and acid-driven. Small berries form in compact bunches, concentrating flavour potential but increasing the risk of grey rot where humidity and canopy density remain high. The vine can produce abundant vegetation, so shaded fruit may retain dominant methoxypyrazine-derived vegetal character while failing to build a complete fruit spectrum. Its strength is precision: acidity and distinctive aroma can remain clear without high body or tannin. Its vulnerability is narrow balance. Too little maturity leaves the wine hard and overtly green; too much heat or delayed picking can erode freshness and aromatic definition. Site, canopy and harvest timing therefore change its expression more dramatically than its pale colour suggests.

Climate & Season

Sauvignon Blanc performs most reliably in cool to moderate conditions with enough sunlight for steady mid-season ripening. Cool weather can protect acidity and prolong aroma development, but persistent cold, cloud or rain may reinforce vegetal notes and raise disease pressure. Excessive heat accelerates sugar accumulation, weakens acidity and can flatten varietal intensity. The useful condition is freshness with completion, not coldness for its own sake.

Water & Exposure

Water supply should sustain leaf function without feeding excessive shoot growth. Surplus water or fertility can create dense shade and humid bunch zones; severe deficit can restrict ripening and narrow aromatic range. Moderate fruit-zone light helps reduce blunt green character, yet sudden or extreme exposure in hot conditions risks sunburn and aroma loss. Airflow and measured exposure matter more than stripping the canopy bare.

Soils & Site

The cultivar does not require one famous soil type. It benefits from dependable drainage, moderate fertility and enough water-holding capacity to avoid severe stress. Highly fertile or poorly drained sites can amplify its natural vigour and increase shading and rot risk. Rootstock, soil depth and available water must work together to regulate growth while carrying the crop evenly to harvest.

VSP is the most dependable fit because it organises vigorous shoots, supports airflow and controls fruit-zone light. Lyre or Smart-Dyson can help on vigorous sites. Bush vines are credible only where growth, water and exposure remain naturally controlled.

Pruning

Cane and spur pruning can both succeed. The real decision is bud load: too few buds intensify shoot vigour, while excessive cropping delays maturity. Pruning must distribute shoots and match crop to the site.

Canopy & Crop

Shoot positioning, trimming and measured leaf removal should create an open, ventilated canopy with protected light. Dense shade preserves dominant green character and humidity; aggressive exposure can burn fruit. Crop level must moderate vigour without delaying ripening.

Harvest Window

Earlier picking gives higher acidity, lighter body and stronger citrus or vegetal definition. Later picking moves towards guava, pineapple and broader texture but may reduce freshness. Aroma, acidity and fruit condition should lead—not sugar alone.

Sorting is critical where compact bunches carry rot. Whole-bunch or direct pressing limits phenolic pickup; crushing or brief skin contact may increase aroma but also bitterness and vegetal material. Protective handling preserves freshness; controlled oxidation creates a broader expression.

Fermentation / Extraction

Cool stainless-steel fermentation preserves citrus and tropical definition, while yeast choice affects aroma release from grape precursors. Warmer, ambient or vessel-led fermentation can build texture and reduce overt fruitiness. Extraction is normally minimal; skin contact should be deliberate and limited.

Maturation

Short tank ageing keeps the wine direct. Lees contact adds texture and savoury depth. Neutral or new oak can support a Rich White when fruit concentration is sufficient, but obvious oak masks varietal precision. Time and oxygen should broaden without dulling.

Finishing

Blending adjusts body, acidity and aromatic line. Malolactic fermentation is selective because it softens acidity and changes aroma. Stabilisation, fining and filtration should secure the wine without stripping volatile character.
