The Nature of the Cultivar

Tannat is a black Vitis vinifera from the Pyrenean vineyards of southwest France, central to Madiran and later emblematic of Uruguay, where Harriague became a familiar name. VIVC registers Tannat as variety 12257; its parentage is not confirmed, although genetic work indicates a close relationship with Manseng Noir. The fairly vigorous vine is usually long-pruned and trellised. It buds four days after Chasselas and reaches mid-season maturity about three and a half weeks later. Large bunches carry small-to-medium berries whose skins produce deeply coloured, exceptionally phenolic wine. Natural acidity can be lively or harsh, and tannins are abundant. The vine is sensitive to mites and leafhoppers, with some grey-rot risk. In warm South African sites it can yield concentrated cultivar wines, rosé and forceful blending material. Its governing problem is refinement: maturity and extraction must build authority without hardness.

Climate & Season

Tannat needs enough warmth and autumn sun to mature skins and seeds, but not unchecked heat that dehydrates berries before tannins resolve. Its native oceanic setting supplies regular water; official French guidance regards the variety as drought-sensitive. South African experience shows success in warm, dry districts when roots and irrigation maintain vine function. Dry harvest weather limits grey rot, while cooler nights protect acidity and aromatic lift.

Water & Exposure

Water-retentive yet well-drained clay-limestone is the documented reference. South African producers also report good results on decomposed granite and clay-rich koffieklip. The common requirement is structure: enough depth and moisture reserve for a vigorous vine, without waterlogging or luxury growth. Avoid shallow drought-prone ground, where stress arrests phenolic maturity, and very fertile wet soils that produce dense canopies and compact, shaded fruit zones.

Soils & Site

Warm benches, ventilated slopes and open inland sites can supply sun, airflow and a long finish to the season. A northeast-facing Robertson example uses full sun and soil warmth to moderate high acidity; in hotter areas, gentler exposure or altitude can retain fruit. Avoid humid hollows and late-season rain traps. Site choice must combine ripening heat with dependable water rather than assuming the variety is drought-proof.

Training

Use a substantial trellis and supported VSP or cordon to carry vigorous, long-pruned growth. Spread shoots and bunches along the fruiting zone rather than crowding the head. Good wire placement improves light, airflow, spray coverage and safe access to large clusters.

Pruning

Long or cane pruning is the documented norm, but bud number must match fertility, water and season length. Set a crop the site can finish, then correct excess early. Over-cropping delays tannin maturity; severe restriction can produce excessive sugar and concentration before texture becomes supple.

Canopy & Crop

Position shoots early and open the canopy for indirect light and airflow. Moderate vigour with water and nitrogen, watch mites and leafhoppers, and protect bunches from grey rot. Retain dappled shade in hot districts. Thin selectively where bunch crowding or crop load threatens even ripening.

Harvest Window

Taste skins and seeds with sugar, pH and acidity. Pick when blackberry, plum and spice replace raw greenness, seeds lose bitterness and tannins feel firm rather than abrasive. Do not wait for colour: Tannat is dark well before every phenolic is mature. Harvest cool and reject rot or dehydration.

Develop. Build a powerful, ageworthy red while turning abundant tannin into length. 3 — Balance suits a fresher cultivar wine or structured blending component; rosé requires a separate minimal-contact route.

Fruit Processing

Sort hard green, rotten and shrivelled fruit. Destem and crush gently, preserving whole berries where useful. Ripe whole bunches can add perfume in proven lots, but stems are not a default. Basket pressing, gravity movement and limited pumping reduce seed and skin abrasion; keep press fractions separate.

Fermentation / Extraction

Use a controlled moderate-to-warm ferment with reliable nutrition. Gentle pump-overs, punch-downs or rack-and-return should be driven by daily tasting, not colour demand. Shorter maceration or pressing before dryness can limit hard tannin; extend only with fully ripe skins and seeds. Avoid crushing pips or overworking the cap.

Maturation

Barrel, foudre or concrete can integrate the frame. Older oak preserves fruit; a modest new-oak share can support concentrated wine without adding dryness. Time and measured oxygen help polymerise tannins. Micro-oxygenation is historically associated with Tannat, but should remain an analytical, trial-led tool rather than a routine recipe.

Finishing

Complete and verify malolactic fermentation, then manage oxygen, sulphur and microbial risk carefully. Fine only after bench trials and avoid stripping colour or fruit. Cabernet Franc, Cabernet Sauvignon, Merlot, Cinsault or Syrah can soften, brighten or lengthen Tannat; cultivar wine needs enough fruit and acidity to carry its tannin.

7–7 — Full Red

Full Red. Dry, deeply coloured and structured, with black fruit, vivid acidity and commanding tannin. A medium red blending component is common; rosé or blanc de noir is a documented alternative.

Structure

Full body; very high tannin; high acidity; medium-high alcohol potential; saturated ruby-purple colour. Ripeness, water, extraction and oxygen decide whether the frame feels severe or composed.
