The Nature of the Cultivar

Tempranillo is Spain's signature early-ripening black cultivar, registered by VIVC under the prime name Tempranillo Tinto as variety 12350. Genetic analyses identify it as the offspring of Albillo Mayor and Benedicto, with Rioja as its origin. The vigorous, rustic vine carries brittle, wind-sensitive shoots and large elongated bunches of medium round black-blue berries. It buds about seven days after Chasselas and reaches mid-season maturity roughly two weeks later, early enough to extend into cooler zones and precede autumn rain. In favourable sites it gives well-coloured, full-bodied wines with plum, strawberry, cherry, violet, liquorice and savoury spice, while medium tannin and acidity support both youthful and long-aged expressions. Hot sites can lose acidity, and quality falls quickly when yields become excessive. South Africa approves Tempranillo, with Tinta Roriz as a recognised synonym, but plantings remain small. The central challenge is balance: use site, water, crop and harvest to preserve freshness before heat or dilution erases its refinement.

Climate & Season

Tempranillo suits temperate to warm climates, but altitude, aspect and diurnal range decide whether early ripening preserves line or slips into softness. Cooler, elevated sites favour cherry, strawberry, violet and firmer acidity; warmer sites build plum, body and alcohol but can flatten freshness. Brittle shoots make wind a spring hazard, while extreme heat and drought can interrupt ripening. An even season and cool nights sustain aroma, colour and tannin before the early harvest.

Water & Exposure

Moderate, steady water and fertility are important because Tempranillo is vigorous yet has limited resistance to drought and high temperatures. Excess water or nitrogen drives canopy and crop, diluting colour, flavour and alcohol; severe stress shuts down ripening and exposes fruit to heat. Regulate irrigation from soil moisture and vine response. Retain dappled shade in hot districts, but maintain enough airflow and light for colour, disease control and even phenolic maturity.

Soils & Site

Tempranillo performs across clay-limestone, loam, gravelly and rocky soils when drainage, water reserve and vigour are balanced. Deeper clay can buffer dry summers; limestone and elevated slopes can support freshness and structure, while free-draining gravel helps control growth where water is available. Avoid waterlogged, excessively fertile or shallow heat-trap sites. Match rootstock, soil depth and aspect to drought risk, crop target and the intended balance between fruit, tannin and acidity.

Training

Use VSP or another supported trellis to secure brittle shoots and manage exposure. Bush or goblet vines suit lower-potential sites and protect bunches from sun; single-stake or divided systems suit specific slopes, machinery and vigour.

Pruning

Short spur pruning is a reliable baseline; cane pruning can suit clone or site. Set buds from fertility, shoot strength, bunch weight and alternate-bearing risk. Excess crop rapidly reduces quality, colour and alcohol; severe restriction can overdrive vigour.

Canopy & Crop

Secure brittle shoots early, remove congestion and expose bunches gradually. Control nitrogen and late water, monitor leafhoppers and eutypa, and thin excess crop before véraison. Preserve hot-side shade while keeping the fruit zone ventilated.

Harvest Window

Follow sugar, acidity, pH, colour, seeds and skins. Earlier fruit gives strawberry, cherry and firmer line; later fruit brings plum and softer texture but risks low acidity. Pick cool, separate blocks by maturity and move fruit promptly.

Fruit Processing

Sort sunburn, shrivel, rot and unripe bunches. Destemming with whole berries is the baseline; carbonic processing builds bright joven wine, while measured whole bunch adds lift when stems are ripe. Protect warm fruit and avoid coarse seed tannin.

Fermentation / Extraction

Ferment moderately warm in tank, concrete or open vessels, matching cap work to berry condition. Use light extraction for young wine and longer, taste-led maceration only with ripe skins and seeds. Press before bitterness and complete malolactic fermentation cleanly.

Maturation

Tank or concrete preserves red fruit; barrel ageing builds breadth and longevity. American oak gives vanilla, coconut and sweet spice; French oak brings cedar and finer toast. Match new-oak level, vessel and time to fruit density, tannin and freshness.

Finishing

Blend blocks and press fractions for freshness and tannin shape. Tempranillo stands alone or partners Garnacha, Graciano and Mazuelo; Cape blends may use Grenache or Shiraz. Fine only for coarse phenolics and filter by stability risk.
