Tequila

Tequila may be the cleanest demonstration of Forces → Choices → Outcomes in any spirit. Six to eight years of agave growth is a genuine, hugely important Force — nothing about that timeline can be rushed.

And its most familiar labels — Blanco, Reposado, Añejo, Extra Añejo — aren't four random categories to memorise. They're Outcomes of one Choice: how long, and in what, the spirit rested.

Why does the same agave, cooked two different ways, produce two completely different production philosophies?

Forces
What shapes it before production.
  • Blue Weber Agave
  • Terroir
  • Altitude
  • Climate
  • Plant Maturity — 6–8 years of growth
Choices
How it is made.
  • Harvest Maturity
  • Jima — The harvest cut itself
  • Cooking — Horno, autoclave or diffuser
  • Crushing
  • Fermentation
  • Distillation
  • Still
  • Cuts
  • Maturation
Outcomes
What that creates.
  • Blanco — Unaged, or aged under 2 months
  • Reposado — Rested 2–12 months in oak
  • Añejo — Aged 1–3 years in oak
  • Extra Añejo — Aged over 3 years in oak

One Plant, Three Cooking Methods

Agave cooked in a traditional horno (a brick or stone oven) develops slowly and picks up roasted, earthy character. An autoclave — a pressurised steel chamber — cooks faster and more consistently. A diffuser skips slow cooking almost entirely, extracting sugars mechanically for speed and yield.

Same plant. Completely different production philosophy — and a very visible example of how one Choice reshapes everything downstream.
