Overview
Champagne lies roughly 150 kilometres east of Paris, centred on the towns of Reims and Épernay, and is divided into several distinct growing areas: the Montagne de Reims, the Vallée de la Marne, the Côte des Blancs, the Côte de Sézanne and the more southerly Aube (Côte des Bar). Three grape varieties dominate: Chardonnay, Pinot Noir and Pinot Meunier, planted across a subsoil of porous Belemnite chalk laid down when the region lay beneath a shallow sea. This chalk is central to Champagne's identity: it drains excess water efficiently while retaining enough moisture at depth to buffer vines through dry spells, and its bright colour helps reflect light and warmth back onto the vines in a climate that is intentionally marginal for ripening. Champagne is unusual among fine wine regions in that grapes are deliberately picked at relatively low sugar and high acidity, since the base wines are designed for secondary fermentation in bottle under the traditional method, not for still wine on their own.
