Overview
Saumur sits on a deep bed of tuffeau, the soft, chalky limestone quarried for centuries to build the châteaux above ground and hollowed out into vast cellar caves below it, caves that now house much of the Loire's traditional-method sparkling wine industry. Chenin Blanc grown on this limestone produces the base wine for Saumur's sparkling tradition as well as increasingly respected still whites, while Cabernet Franc, especially in the Saumur-Champigny sub-zone's clay-and-limestone soils, produces some of the Loire's most structured and ageworthy red wines, benefiting from the tuffeau's excellent drainage and heat retention.
