Overview
Stilbaai is a newly established Wine of Origin district in South Africa's Cape South Coast Region, incorporating the Goukou River Valley ward. The district expands the former Stilbaai East demarcation around the Goukou River estuary and its adjoining coastal hills. Calcarenite and massive calcium-carbonate deposits are the defining geological feature, with pockets of limestone-shale and very little topsoil in the leanest sites. The Indian Ocean moderates summer heat, while the river corridor and pronounced day-night temperature shift deliver unusually cold nights and reliable winter chill for a coastal setting. The terrain is low and exposed, with frost, wind, shallow rooting depth and bird pressure among the practical challenges. Commercial plantings remain tiny and young, so Stilbaai's wine identity is still emerging. Chardonnay and Pinot Noir are the clearest early focus, selected for their fit with cool temperatures, lean soils and a long ripening season.

Climate & Season

Stilbaai has a cool-to-moderate maritime climate with rainfall spread through the year and peaks around autumn and spring. Ocean moderation, cold nights and an October-to-April season suggest an orientation near Winkler Regions II-III.

Rainfall & Water

Public town references indicate roughly 600-650 mm annually, distributed more evenly than in classic winter-rainfall Cape districts. Shallow limestone sites still have limited storage, making rooting preparation, soil depth and supplemental water important.

Maritime / Continental Influence

The district sits beside the Indian Ocean and follows the lower Goukou River toward its estuary. Coastal air limits summer extremes, while the river valley channels cold air and contributes to a pronounced diurnal range.

Mountains & Topography

Low calcarenite hills and narrow river-valley slopes extend inland for about 16 km before reaching the built-up estuary. Vineyards are generally low, approximately 10-150 m, with aspect and position controlling exposure, drainage and frost risk.

Wind

Open coastal sites receive regular marine wind, ventilating canopies and moderating heat. Cold-air pooling can bring frost, while strong spring wind can affect flowering and young-vine growth.

Vintage

Winter chill, frost timing, spring wind, rainfall distribution and late-season humidity will drive vintage differences. With fewer than 10 ha planted in the broader area in early 2026, long-term vintage behaviour is not yet established.
